Belgian vegan foodie @https.hanne has created the ultimate vegan Twix bars using Yogi & Yousef dates! These delicious treats are gluten-free, grain-free, refined sugar-free, and completely vegan.

Ingredients
For the shortbread base
- 82 g coconut flour
- 72 g coconut oil, softened
- 3 tbsp Steviala Sweet & Toffee syrup
For the caramel
- 7 pitted dates, finely chopped
- 4 g cornstarch
- 150 ml coconut cream
- 72 g Steviala Ery-Bronze sweetener
- A pinch of salt
For the chocolate topping
- 50 g dark chocolate
- ½ tbsp coconut oil
Instructions
- Preheat the oven to 170°C (340°F) and lightly grease a baking tin.
- In a medium bowl, combine the coconut flour, syrup, and coconut oil until a dough forms.
- Press the dough evenly into the prepared tin and bake until the edges begin to turn golden brown.
- In a small blender, combine the cornstarch, chopped dates, and 85 ml of the coconut cream (or coconut milk). Blend until smooth and creamy.
- Add the Steviala Ery-Bronze sweetener to a saucepan. Pour in the coconut mixture and heat over medium heat, stirring continuously. Simmer gently until the caramel becomes glossy and turns a deep golden brown.
- Remove from the heat and stir in the remaining coconut cream and a pinch of salt until smooth.
- Allow the caramel to cool slightly, then pour it over the baked base. Place it in the freezer until firm.
- Melt the dark chocolate and coconut oil together in the microwave or using a double boiler.
- Once the caramel has set, pour the melted chocolate over the top and return the bars to the freezer until the chocolate has hardened.
- Slice into bars and enjoy!
