What makes peanut butter dates so good?
All our dates are of the Dalia Sukkary variety, famous for their rich, caramel-like flavour and packed with vitamins and minerals. But what really stands out is their texture—Dalia Sukkary dates are velvety soft and melt-in-the-mouth smooth, making them perfect for this recipe! Dates and peanut butter are a match made in heaven. You can go for smooth, creamy peanut butter or opt for crunchy if you fancy a bit of extra texture.
Preparations
Pit and stuff the dates
Start by pitting the dates. Carefully slice them open lengthways, remove the pit, and fill each one with a full teaspoon of peanut butter. Pop the stuffed dates into the freezer for an hour to firm up.
Melt the chocolate
Roughly chop the dark chocolate. Melt roughly two-thirds of it (around 125g–140g) using either the microwave or a heatproof bowl set over a pan of simmering water (au bain-marie). Once melted, stir in the remaining chopped chocolate—this tempers it slightly so it cools faster and sets beautifully.
Dip and decorate
After an hour, check that the dates have firmed up properly before taking them out of the freezer. Dip each date into the melted chocolate, then transfer to a sheet of baking parchment.
