Method

Whip up your very own date cake with oats in under an hour with just a few simple steps:

  1. Preheat the oven to 180°C.
  2. Start by making the base. In a large bowl, mix the ground oats, eggs, yogurt and honey until you have a smooth, pliable dough. Shape this into a bakingpan. Add a splash of oil. Then pop the dough into the oven at 180°C for 35 to 45 minutes.
  3. Next, move on to the filling. Pit the dates and chop them into smaller pieces. Finely crush the nuts. Mix the dates and nuts together and stir in the honey. At this step, you can also add a touch of granola and butter if you like—this makes the filling slightly firmer and thicker.
  4. Remove the base from the oven. Spoon the filling onto the base and press it down well. Garnish the date tart with a final sprinkle of oats and the desiccated coconut. Give the date and oat tart plenty of time to set properly in the fridge. A couple of hours will do.

Tip: toast the desiccated coconut.
