Peanut butter cookie balls

  • 1 1/4 cups dates, pits removed (200g)
  • 3/4 cup shelled peanuts (120g)
  • pinch sea salt optional



  1. Add dates to a food processor and pulse/blend until you have a smooth paste. Alternatively, you can use 200g date paste and skip this step!
  2. Add the peanuts, and pulse or mix until combined. You want there to be consistently small pieces but not overly processed.
  3. Use your hands to roll the dough into eight ball.
  4. Pop in the fridge for 30 minutes to set, or eat as is! Balls keep in the fridge for up to a week, or in the freezer for several months!
